Mr. Danilo Barbosa's great-grandfather, Elias Barbosa, passed it on to his grandfather, Claudio Barbosa de Paula, and from him to his father, Jairo Barbosa de Paula, and now Mr. Barbosa works with his generation, his sons Vítor Marcelo and Sergio Ricardo. When Danilo says family business he means husband, wife, father, son and daughter-in-law all working together, so the office is like a big home where everybody shares the same dream, supports each other, learns and grows together. The office is located in Carmo do Paranaíba, Estate of Minas Gerais. Plots tend to be small and typical varieties grown include Castillo, Colombia, Caturra, Typica, Bourbon and Tabi.\u003cbr\u003e\u003cbr\u003eThe EA process takes fermented molasses derived from sugarcane to create ethanol, which is then combined with acetic acid to form ethyl acetate (EA), the organic compound used to decaffeinate coffee beans. Green beans are steamed to elevate moisture content and induce swelling, which helps to facilitate the extraction of caffeine. Beans are then washed with EA to dissolve the remaining caffeine. \u003cbr\u003e\u003cbr\u003eEA is a colorless liquid with a sweet and fruity aroma that is generally considered pleasant. Despite the name, sugar is not included in the finished product. The fresh fruit processing facility of Autumn Amber is situated in Linxiang District, just 6 kilometers from the city of Lincang, with an annual processing capacity of around 2,000 tons of fresh fruit. The plantation adheres to strict selection criteria: it is located above an altitude of 1,600 meters, features weakly acidic soil, fertile ground, and experiences significant temperature variations between day and night.\u003cbr\u003e\u003cbr\u003e\u003cbr\u003ePROCESSING\u003cbr\u003eThis lot is harvested using only fully ripe cherries, with sweetness tests conducted to determine readiness based on different maturity batches. There will be 5-6 harvests throughout the season, with each harvest followed by 2 days of anaerobic fermentation, during which pH levels are continuously monitored.
